Last week, my neighbor asked if I would like some rhubarb. I LOVE rhubarb... in fact, every year, instead of a cake, I request a Birthday Rhubarb Pie! A short time later, my neighbor brought over a large bag of full of Rhubarb and in my fridge it sits! I feel guilty every time I open the refrigerator door! I was so excited to get it and I'm worried it is going to spoil! The problem... I don't feel like making rhubarb pie or my Rhubarb Quick Bread. I love them both, but I want something different. We had a very early spring this year, so it will be a long rhubarb season and I don't want to get tired of my favorite pie! Yesterday, I started searching and found new recipes that I will be trying, tweaking, and putting my own touches to. I have already tried two and have been inspired to proclaim that the month of June will be "Rhubarb Month" on my blog! The best part is that I will be using rhubarb for every course... from appetizers to desserts (just don't expect pie)! After all, rhubarb is considered a vegetable most everywhere, other than the U.S.*, so why not use it for savory dishes as well as sweet! So stay tuned and get ready for our early summer rhubarb adventure!
